Cinnamon Chia Protein Pancakes with Honey Drizzle

I like to start my mornings a little on the sweet side, along with some protein to kickstart my day. So when the folks at ViSalus asked me if I would create a recipe using the Vi-Shape Shake Mix, I immediately thought protein pancakes were in order. After a little kitchen concocting, I ended up with just the right protein/sweet combination using some of my favorite ingredients – almond flour, cinnamon, and chia seeds. These cakes turn out a bit firm, which makes them great to grab and go. They’re sweet enough on their own, but you can always bring the honey along for dipping.

Makes: 2 servings (3 small pancakes per serving)

Ingredients:
2 scoops ViSalus Vi-Shape Shake Mix
1/2 cup almond flour
1 tsp baking powder
1/2 tsp cinnamon
1 TB chia seeds
1 egg
2 egg whites
1/4 cup unsweetened almond milk
1 tsp vanilla
2 TB honey

Directions:
1. Combine all ingredients in a small mixing bowl and blend with a whisk until smooth.
2. Coat a nonstick skillet with cooking spray and set over medium heat. Add the pancake mix in 1/4 cup portions and cook until the bottom of the pancakes are lightly browned. Flip the pancakes and cook until other side is lightly browned.
3. Drizzle with honey and sprinkle with additional cinnamon.

Vi-Shape Shake Mix has 12 grams of protein per serving (2 scoops). It’s gluten-free, lactose free, and low in sodium. Because these pancakes have some staying power, they’re also a nice filling option for lunch or dinner… or grab a couple for a snack. Enjoy!
